I love my herb garden. This photo was taken soon after it was planted, the story goes …
For years I tried to grow plants for their prettiness in the raised bed that act as a walls to our outdoor deck. The Italian husband grumbled about it being a perfect spot for a herb garden. Many years later, with a dog that chewed all flowering plants and a drought that killed all living things (water was too precious for the remaining plants), nothing remained except an Aloe Vera plant. This plant became so big that it was starting to push the morter out of the bricks, so it to had to go.
I suggested a herb garden after watching an SBS show about Friuli Venezia Guilia (the region in Italy that my husband’s family comes from). He was outside in a flash — new soil, thanks to our worm farm, herbs were replanted from another garden and Nonno’s supply.
Now we have a green lush herb garden that is depicted in this picture, from left to right (sorry about not following the rhyme) Chives, Curly Parsley, Chilli plant #1, thyme, flat leafed parsley, chilli plants #2and #3, oregano, sage, basil and rosemary.
All my herbs are now close to the kitchen, they are a lush green border to our outdoor area. At night when the candles and lanterns flicker they look resplendent. Thanks SBS and the ever patient husband. Who has only just finished saying “I have been telling you for years…”
Herb Frittata Savoury Recipe #3
6 eggs (whisked); 1 onion and 1 clove garlic (diced); 1 1/2 cup of fresh herbs (basil, sage, chives, parsley, oregano, thyme) finely chopped; 25gm of shredded light tasty cheese; 15gm of light mozzarella; 10gm grated parmesan cheese; 2×3 sec spray of oil
(Preheat Grill low/medium heat)
In a bowl whisk eggs, herbs and cheeses (except parmesan). Spray heavy fry pan with oil. Cook on medium heat onion and garlic for 2 minutes. Pour in the egg mixture and cook until the top is starting to set. Sprinkle parmesan onto the top, then move the fry pan to the grill. Grill until the parmesan is golden and the frittata looks firm.
Serve with green salad or shredded carrots and garlic with a dash of Balsamic vinegar.
